That’s the philosophy of Araka bar manager Tim Kosuge, who uses a cream whipper to create sweet digestifs in seconds, including a St. Germain Elderflower Liqueur infused with lavender flower and the freshest, most intense limoncello you’ve ever tasted, made from the zest of two lemons, Stoli and rich simple syrup. The method is simple: Just pour the contents into the whipper, screw on the lid, charge the cartridge, then let it sit while the pressure builds. Double-strain the contents into a chilled tasting glass and voila! Instant infusion.
