The Shaved Duck's Baked Apple

You know what they say about an apple a day. But The Shaved Duck’s baked apple? We’ll take two, please. Chef Kat Kobylarek’s savory version of this autumn staple marries the apple’s sweetness with smoky pulled pork, and then ups the ante with bacon; pistachio butter adds crunch and depth of flavor. Apple season never tasted so good.


Baked Apple

10 servings

2½ cups chopped and toasted pistachios 
1/3 cup soy sauce
¼ lb. butter (1 stick), melted
1/3 cup sweet soy sauce
¼ cup honey
5 Granny Smith apples
¼ onion
4 slices bacon
½ lb. pulled smoked pork*

•Preheat the oven to 375 degrees.
•Make the pistachio butter: Combine the pistachios, soy sauce, melted butter, sweet soy and honey in a bowl and mix thoroughly.
•Core and halve the apples, then tightly wrap each half in tinfoil.
•Bake the apples for 10 minutes.
•While the apples are baking, dice the onion and bacon and combine them in a sauté pan. Cook over medium heat, stirring frequently, until the onions are translucent and the bacon is crispy. Remove from the heat.
•In a bowl, combine the bacon and onions with the pulled pork and stir to mix well.
•Assemble by placing one apple half on a plate and top with 2 ounces of the pulled pork mixture and then 1 tablespoon of the pistachio butter. Serve.
