The Scoop: EdgeWild to take space at Busch’s Grove for locale No. 2

EdgeWild Restaurant & Winery is expected to open a second location at the former Busch’s Grove in Ladue. A press release issued yesterday stated that EdgeWild owners Andy and Dee Dee Kohn are working again with restaurateur and EdgeWild proprietor Chris LaRocca to open a second EdgeWild establishment in the Ladue space in early summer 2013.

EdgeWild executive chef Aaron Baggett will develop the menu for the new location, which will focus on American cuisine. Baggett will oversee the kitchens and culinary teams at both the Ladue location and the Chesterfield establishment (pictured), which opened in late 2011 (Sauce reviewed it this past April.).

The beverage program at EdgeWild will continue in the “wild” vein of offering affordable American fine wines. However, according to the release, the new location will also have a greater emphasis on the bar and offer an increased selection of appetizers.

“It will be the new neighborhood watering hole,” said owner Andy Kohn. “The heart of the restaurant will be an oversized bar where patrons can enjoy everything from local craft beers, cocktails and affordable fine wines to tasty appetizers, chopped salads, sandwiches and burgers.”

LaRocca told The Scoop that the wine list at the Ladue location will be more extensive than the offerings in Chesterfield and that patrons at the new spot can expect “creative cocktails.” The individual slated for developing that program will be hired from within the current EdgeWild team, said LaRocca. Thirsty drinkers can also expect more than 20 local microbrews on tap.

According to LaRocca, a letter of intent has been signed, but a lease has not. “We’re confident that we’re going to it together,” he added. Upon completion of the deal, EdgeWild would not assume the entirety of the former Busch’s Grove space, however. According to LaRocca, the restaurant will occupy approximately 7,500 square feet of the multi-tenant space, which will amount to a seating capacity of approximately 200, to be divided into an 80-seat bar, a main dining area, and a barrel room/private dining area. There is no word yet on what will occupy the remainder of the Bush’s Grove space.
