The Scoop: Capitalist Pig owner goes Off Beet

Ron Buechele, chef-owner of barbecue joint Capitalist Pig and Mad Art Gallery in Soulard, has a lot cooking these days. In January, he announced that he was closing down the ‘cue until the weather got warmer but that he was also going to hold monthly themed dinners, beginning in February, in the historic jail cells that are part of the Mad Art Gallery building.

Today, Buechele shared news that the dinner series now has a name: Off Beet. Buechele calls Off Beat a “micro-restaurant” because, “I am the one making it and plating it and delivering it” to the 8-seat farm tables in each jail cell. “It’s a one man show,” he said. The next dinner, slated for April 27, is termed “The Last Supper,” with each of the five courses based on the last meals “of infamous and famous people,” said Buechele. For example, the first course – tuna carpaccio with flaxseed lavash –  is inspired by Jimi Hendrix’s last meal of a tuna fish sandwich. Other courses include dishes based on the final meals of John F. Kennedy, Gen. George Custer and executed federal convicts Victor Feguer and Timothy McVeigh. This menu is posted on Off Beet’s Facebook page. Additionally, reservations for The Last Supper can be made by calling the gallery at 314.771.8230, or sending an email to info@madart.com. Information about Off Beet will also be available soon on the Mad Art Gallery website.

Buechele has also given a date for the re-opening of Capitalist Pig: Tuesday, April 9. He noted that the entrance has changed; instead of coming through the side door, customers can come to the front entrance on 12th Street. Capitalist Pig will operate Tuesday through Saturday, from 11 a.m. until food sells out.
