Big Red

If you like pork – and we know you do – you’ll want to dine at Maplewood’s Monarch Restaurant and Edwardsville’s Erato on Main soon. Chefs Joshua Galliano and Kevin Willmann have started working with their respective halves of a locally raised Red Wattle, a heritage breed pig making its area debut. The beef-like meat, Willmann reported, is amply marbled.

Galliano will be serving dishes like boudin noir with mashed potatoes and roasted apples topped off with a crème fraîche-mustard sauce. Pork loin is likely later on. Willmann will likewise have loin chops seasoned with apple-cider brine along with a cold-smoked, Louisiana-style andouille sausage with hefty pork chunks. Also watch for bacon, ribs, hocks, snout, fatback – the works. Having weighed in at about 220 pounds, this big Red Wattle promises to go a long way.

    I could not agree more with that comment. Why would you put a picture of a BABY pig when talking about eating pork?? Terrible judgement here, hope somebody steps up and appologizes to the owners of those restaurants for ruining that article.

    I completely disagree with the comment above. All meat comes from animals. All animals start as babies. When we purchase food from the supermarket it is wrapped in plastic and prettied up… allowin g us to forget that death begets life. Not wanting to associate an animal with a meat-based dinner is a fundamental concern of all of us as we begin to think about natural resources and human consumption. Kudos to this blog for presenting reality.

    This picture is disgusting to look at, it looks like the baby has lost it’s mom. I can’t believe you think this would make people want to eat meat!

    This is awful!!!! I cannot believe that a respectful magazine like Sauce would have such terrible judgement. This is a horrible advertisement for Monarch and Erato. Please change it…quickly. And as for Tim’s comment above, I think the reality here is that many people find this disturbing.

    i understand this magazine to be about the love, joy, passion, craft, respect, and beauty of FOOD. Our food comes from many places. the red wattle is a herritage breed that would be lost if not for the energy of Farrar Out Farms and myself and my collegues’ respect for their efforts. let’s eat good food. lets eat responsible food, let’s not pass our severly judgemental and disrespectful views on each other. if it is not P.C. to show the beauty of an animal raised to be food in it’s early stages of life, then we have lost a great since of respect for the same animal that we cook, consume, and “grow up big and strong” on. no appology necessary.

    I understand why some of those posting here find this picture disturbing. Most of us in the modern world are far removed from the sources from which our food comes – particularly meat. Most of us, including myself, only encounter meat after it has been processed and become available at a store or restaurant. While the source and processing of meat can be, understandably, a disturbing concept, we need to acknowledge and appreciate the truth. I agree with Tim and Kevin. We should be most concerned with the treatment and care of any animals raised for food. They should be treated with the respect and dignity a living creature deserves. Most of these small/family farms/producers do just that, and we should support them.

    Wow, you guys are sensitive. Where do you think fresh meat products come from? The sky?

    Part of being a responsible consumer is being educated about who raises your meat, where it comes from, and the process from birth to slaughter. Farrar Out Farms does their work in an extremely responsible way; much more so than the mega-farm suppliers of your local Dierberg’s or Schnucks. If you can’t stand seeing a picture of a young pig, then you really wouldn’t stand the deplorable conditions at many confined animal feeding operations.

    We need to praise local farmers who can produce meat responsibly and competitively. They’re fighting an extremely tough fight against mega-farms.

    I completely agree with Tim, Kevin, and MDH. It isn’t as if this article posted pictures of the butchering process. In that type of situation I would understand some people being bothered by that. What I don’t understand is you not being able to stand seeing an animal that you are going to consume or have already consumed, in it’s natural state. You should probably stop eating meat all together. I think you can have great respect for an animal, how it is raised, and what it contributes to our basic cycle of life and still enjoy eating that animal. In fact, I think it shows greater respect for the animal, than just unwrapping a package and not dealing with the reality of where it came from. It seems a little hypocritical to me to think it helps you sleep at night to not know that your hamburger was once roaming a pasture, and if you want to pretty up the situation to that extent you probably don’t deserve to try the delicious Red Wattle anyway. Before you become so critical of others in the future, maybe a little self reflection is in order. Did any of you who were so quick to judge do any research on how the pigs are raised at “Farrar Out Farms” ? Have any of you so quick to judge ever gone fishing? Have any of you ever been to a seafood restaurant and picked out your lobster? I’m sure you couldn’t possibly think that any less wrong because fish aren’t cute and cuddly right? Think twice next time you decide to “try” to make a bid deal out of nothing. Stop wasting everyones time with your negative comments and learn to enjoy “life” a little more!

    If you want to eat meat, you must have the courage to admit that doing so causes the death of animals, including animals who were at one point babies with mothers. I eat meat, and I do recognize this fact. To ignore it and to be offended at those who point it out, is to be the worst sort of hypocrite. It also implies moralistic judgment upon the people who do the unpleasant work of killing your meat for you. If you’re vegetarian, that’s fine, if not, it’s hypocritical.

    This is where meat comes from babies lose parents babies are also ripped away from the parents. If you are going to eat meat be responsible and learn and accept how much these creatures suffer if this picture bothers you it is for a very good reason

    Those pigs are terribly cute, and smart too. For anyone disturbed by the thought of eating them, check out the many vegan and vegetarian recipes available on the web. The options for eating delicious food from plant sources are more diverse than ever.

    They are showcasing a particuliar breed of pig. What other type of photo are they supposed to use? If you don’t like acknowledging that your pork chop came from a pig (that once was a cute baby) then don’t eat meat!
    The picture doesn’t bother me because I enjoy eating meat. If I didn’t, someone else would, and I’d be missing out!

    Yes, meat comes from somewhere. If Sauce needs to apologize it should be for reminding people of that fact. Monarch’s meat came from animals that were treated well and spared the horrors of factory farms. We should all probably feel a little guilty eating meat; but if you respect the animal and the craft that turns the animal into delicious, nourishing food, you are indeed an enlightened being. Less meat, raised the right way, is my motto.

    Some of these are comments are a brilliant example of how naive people are.

    As for the vegetarians/vegans – the death of one single animal (i.e. cow or pig) can feed a family for a long time. Compare that to the dozens of various animals that inadvertantly die during the machine harvesting of grains, vegetables, and fruits – squirrels, mice, birds, snakes, etc. In fact, soy farming in Brazil on land that was formerly rainforest very well might lead to the extinction of some species. It could therefore be argued that a vegetarian causes more suffering in the world than a pure carnivore. That’s not even counting that I can eat a locally raised (and coddled) animal fed nothing but grass, whereas these days most grains are fertilizer(petroleum)-reliant and have to make numerous stops at refineries/packaging plants (more petroleum) before being shipped across the world (more petroleum) to get in my mouth. And it gets better – soy and most grains are chockful of anti-nutrients that play a big role in many autoimmune diseases! Yippee!! Bad for my health AND the environment – vegetarianism is such a lose-lose proposition it boggles the mind.

    (for those who would dare say meat is bad for you, there has never ever been so much as one single scientific study that has shown that saturated fat/cholesterol/meat is unhealthy. although its probably the case that factory farmed meat ain’t that great due to the unnatural grain diet fed those poor animals)

    I don’t understand why people are saying they will punish the restaurants for a picture that was posted on a website that is not affiliated with either restaurant. Monarch and Erato did not write the post, nor did they put the pig picture with it, although they are going to serve delicious pork products coming from said pig. And as Kevin said, “no apology necessary.” Mmmm, humanely raised bacon.
