Drink This St. Patty’s Day Edition: McGurk’s hybrid cocktail gets Irish eyes a-cryin’

If you wanna drink like an Irishman on St. Patrick’s Day, it’s gotta be Guinness, right? But what if you prefer cocktails? At McGurk’s Public House in O’Fallon, you can have both by ordering up a DGB. This beer cocktail is a combination of Guinness, a half shot of Irish whiskey and a shot of crème de cocoa, which bar manager Charlie Myers flips between a couple shakers to blend. The stout is still robust, while the chocolate liqueur adds a smooth texture and keeps bitter notes at bay. The whiskey? Well, everything’s better with a little whiskey, right?
Myers will be pouring the DBG at the St. Patty’s Day celebration at McGurk’s out west today despite the fact that this hybrid cocktail may incite ire among a few folks who hail from the Emerald Isle. “A true Irishman would kill me for breaking the rules. Mistake No. 1: They would say I am ruining the integrity of Guinness by speed-pouring it,” said Myers. Well, you do what you gotta do when you’re four-deep at the bar. And mistake No. 2? “A good Irishman wouldn’t pollute his whiskey of choice, expect maybe with an ice cube or a splash of water.” To us, Myers deserves an Irish toast; at least he knows the error of his ways.
