Meatless Monday: Farm to Falafel

It’s like I died and went to heaven – or Lulu’s Local Eatery. You know, that food truck at Food Truck Fridays that has lines across the park? I was lucky enough to catch Lulu’s on a slower day at City Garden, but even if there was a line, the wait would have been worth it.

After hearing rave reviews about the truck with the rooftop garden, I couldn’t wait to try the Sweet Potato Falafel. The bright orange super food is mashed and combined with a heavy hand of spices, including cumin and garlic. After being lightly fried in all-natural peanut oil and laid in a warm, fluffy pita, this sweet falafel is painted with a thick, zesty tzatziki sauce that adds just the right amount of savory. Throw in the crunch of cool cucumbers and mild red onions, and you have one filling farm-to-truck meal that starts the week off right.

Not only can you feel good about what this meal does (or doesn’t do) to your waistline, you can also breathe a sigh of relief about its environmental impact. Owners Robert Tucker and Lauren Loomis use local ingredients when they can, supporting many local farmers and producers. They also use 100-percent compostable and biodegradable serving ware with their food. And a rooftop garden? That’s just the icing on the cake – er, truck.

I’ll certainly be following Lulu’s, so I can check out the truck’s other signature items. And, if it just so happens to park next to Sarah’s Cake Stop, there’s nothing better than a supremely succulent Triple Chocolate cupcake to ruin a healthy lunch.
