Stocking Up: Troutdale trout are a tasty, local treat

010511_troutdaleStuck as we are, smack in the middle of flyover country, it’s easy to forget that in addition to our thriving local produce, beef and pork industries, we also have access to some of the best fish in the country. Of course, we don’t mean sea-going specimens like tuna or grouper, we mean the easily-overlooked but altogether tasty trout from Troutdale Farm in Gravois Mills, Mo.

A number of fine dining establishments around town proudly proclaim their use of Troutdale products and we’re inclined to order it whenever it appears. Recently, however, we’ve taken to purchasing our own frozen fillets from Local Harvest Grocery and cooking them up at home.

The filets arrive butterflied and skin-on but don’t for a minute think about removing it. That skin crisps up quite nicely and serves as a tasty foil for the delicate meat. For a simple and elegant approach, lightly dust the fillets with corn meal and give them a quick sauté on each side in a cast-iron pan. If you have some toasted pecans (or even better, Missouri pecans) on hand, scatter them on top of the fish when it’s done cooking. If you have a little more time, sauté some winter greens and add in some raisins and pine nuts. Grill or broil the fillets, then stuff them with the greens mixture. No matter how you decide to prepare them, you really can’t go wrong with these tasty, inexpensive and local treats.
