Creamy Citrus Pie in a Pretzel Crust
1 cup crushed pretzels
½ cup crushed graham crackers
1/3 cup sugar
8 tablespoons melted butter
4 egg yolks
1 Tbsp. grated lime zest
1 can (14 oz.) sweetened condensed milk
½ cup Key lime juice (bottled is available at most grocery stores)
2 Tbsp. orange juice
• Preheat oven to 325 degrees and place rack in the center position. In a bowl, mix together crushed pretzels, crushed graham crackers, sugar and butter and press into the bottom and sides of a 9-inch glass pie pan. Bake for 15 minutes and let cool.
• In a medium bowl, mix together the egg yolks, lime zest, sweetened condensed milk, Key lime juice and orange juice. Pour filling into crust and bake for 15-17 minutes or until the center is semi-firm and slightly jiggly. Remove from oven and place on a cooling rack. Cover tightly with plastic wrap and refrigerate before serving.
