Strawberry-Rhubarb Cobbler



Ingredients

8 cups strawberries, cleaned and quartered
3 cups rhubarb, cleaned and diced
1¼ cup sugar, plus more for sprinkling, divided
4 cups plus 2 Tbsp. all-purpose flour, divided
2 Tbsp. baking powder
1 stick cold butter, diced
2 cups heavy cream

Preparation

• Preheat oven to 375 degrees.

• Mix fruit, one cup of sugar and two tablespoons of flour together until combine.

• Divide evenly into 12 individual dessert bowls.

• Place on a cookie sheet.

• Meanwhile, make the dough by combining the remaining quarter cup of sugar and four cups of flour with the baking soda.

• Gradually add the diced butter until the mixture resembles a coarse meal.

• Stir in heavy cream and mix until just blended.

• Make patties with dough, being careful not to overwork it, and top the fruit with the dough.

• Sprinkle each bowl lightly with sugar.

• Bake for 25 to 30 minutes, or until golden brown and bubbly.
