Ingredients
2 cups black beans, cooked tender
4 tomatillos, grilled and diced
2 red bell peppers, diced
½ bunch cilantro, chopped
Juice of 3 limes
1 small red onion, diced
2 Tbsp. olive oil
Salt and black pepper to taste
Preparation
• Combine all of the ingredients in a mixing bowl.
