It will take about six weeks to produce a batch.
Limoncello

INGREDIENTS

12 lemons (preferably organic)
1 750-mL bottle 100-proof vodka or grain alcohol
2 cups water
2 cups sugar
1 750-mL bottle better-quality vodka (or possibly water or more simple syrup depending on your personal taste)

PREPARATION

• Wash the lemons thoroughly and zest them using a Microplane zester. Add the zest to a large, scrupulously clean screw-top glass jar. Add the 100-proof vodka or grain alcohol. Let sit in a cool, dry place for about 2 weeks. Filter out the zest and return the vodka mixture to the glass jar.
• Combine the water and sugar in a large saucepan and heat gently until the sugar dissolves. Cool and add to the vodka mixture. Return it to the cool, dry place and let it sit for about 30 days.
• Thin the vodka mixture with the bottle of better-quality vodka. If you prefer a less potent version, omit the vodka and use a similar amount of water or more simple syrup.
• Pour into decorative bottles and store in the freezer.
