Vero Pizza & Pasta, the meal kit company from the team behind Katie’s Pizza & Pasta Osteria, will go mobile next month. Co-owner Katie Collier said the new Vero Pizza & Pasta food truck will be on the street by mid-April, offering a lunch menu of paninis and salads, as well as selling Vero meal kits.
According to Collier, the sandwich choices will change every couple of weeks, and the salad choice will switch daily. The inaugural sandwich menu includes prosciutto with mozzarella, fig mostarda and arugula; a classic Italian sandwich with plenty of cured meats and an olive and tomato tapanade; tuna with capers, olive oil, lemon, fennel and watercress; and a veggie version with basil pesto, shaved zucchini, artichoke, marinated mushrooms and balsamic vinegar.
In addition to lunch, guests can pick up the week’s featured Vero meal kits from the truck to take home for dinner. The kits available will change regularly as well, Collier said, and will include the new Vero for two, a smaller-sized kit. There will also be event-themed kits offered, including Mother’s Day and Memorial Day versions.
“A lot of people are still unfamiliar with meal kits and what Vero is, so it’s a great way to get it to them instantly and have someone on the truck talk them through it,” Collier said. It’s also perfect for folks who want the Vero experience immediately, since the kits are normally ordered online and shipped the next day.
“We get calls all the time asking ‘Can I get one today?'” she said. “This way, if they really want one they can come find the truck and pick one up.”
Collier’s brother, Tommy Lee Collier, owns the Slide Piece food trucks and is a partner in the venture. He will manage the Vero truck, and fans will be able to find the truck’s whereabouts via Facebook and Instagram.
