Petrichor Brewing will open in March in O’Fallon, Missouri

The Winghaven neighborhood in O’Fallon, Missouri, will soon have a new craft brewpub. Petrichor Brewing plans to open its doors at 7434 Village Center Drive on March 1.

Brothers Michael and Jonathan Crowell have been homebrewing since the early 2010s and are partnering with friend Efrain Barreto, who has opened craft beer bars in Costa Rica, on their St. Charles County venture.

Michael Crowell said the former Llywelyn’s Pub location, featuring a patio and seating for 110 to 115 people, is a perfect spot for them.

“It feels like we’re a neighborhood pub that’s really in the middle of a neighborhood,” he said. “We’ll be brewing in the front so guests can see the process.”

Crowell said he plans to use ingredients like barley, grapes, wild yeast and fruit from farms owned by family members in Texas, St. James and Wentzville.

Crowell hopes by 2020 to release a farm-to-tap beer entirely from ingredients they have grown themselves. “Not a lot of people try to make great beer with ingredients they propagate themselves,” he said.

The brewpub will run 24 taps, including 10 house beers with a focus on classic American recipes, eight guest taps, and an assortment of other options like wine and cocktails on tap, accompanied by a kitchen producing a light menu with a focus on pizza and arepas.

Petrichor is slated to be open 4 to 11 p.m. Tuesday through Thursday, 3 p.m. to midnight Friday, 11 a.m. to midnight Saturday, and 11 a.m. to 9 p.m. Sunday.
