Farmhaus' Fennel-Garlic Rub

Big Sky Brewing Co.’s Big Sky Trout Slayer Ale is slightly sweet and subtly hoppy. The depth of flavor in this rub perfectly complements the ale’s crisp finish, from the sweet fennel to the mashed garlic to the tang of ground ginger.
Ingredients
½ Tbsp. ground ginger
½ Tbsp. fennel seed, toasted and then
ground to a powder
1 Tbsp. freshly ground black pepper
2 Tbsp. dried thyme
½ Tbsp. cumin
½ tsp. cayenne
8 cloves garlic, mortared to paste
2 Tbsp. salt
Extra virgin olive oil
Preparation
• Combine the first seven ingredients.
• Sprinkle salt inside the bird’s neck and main
cavity and on top of its skin.
• Cover the entire bird with olive oil, and then
season the outside of the bird with the rub.
• Proceed with the basic recipe.
