Picking the Perfect Watermelon

In The Many Ways of Watermelon, we provided 10 ways to use the flesh, rind and even the seeds from this summer fruit to turn out everything from sodas to soups to salads. But first you have to pick the perfect melon. Here are a few tips to finding – and storing – the right watermelon in no time. • The exterior of a ripe watermelon should be a smooth, waxy green, with or without stripes and free of bruises, cuts and dents. • Test for ripeness: Listen for a deep, low tone when you snap a melon with your thumb and third finger. • If purchasing a watermelon that has been cut, choose one with a bright, crisp, even-colored flesh. • Whole melons will keep in the refrigerator no longer than one week. Once cut, cover with plastic wrap and refrigerate.
