Square One Maple Stout Ice Cream

Ingredients

1 cup whole milk
1 cup heavy cream
¼ cup granulated sugar
¼ cup maple syrup (increase to ½ cup if not using Maple Stout beer)
Pinch of salt
4 large egg yolks
7 oz. semi-sweet chocolate chips or chopped chocolate
1 cup Square One Brewery and Distillery Maple Stout (or other stout/porter)
Special tools: ice cream maker, whisk, fine mesh strainer


Preparation

• Place milk, cream, sugar, syrup and salt in a medium saucepan. Bring to a simmer over medium heat.

• In a medium-sized bowl, whisk egg yolks, then slowly pour 1 cup of the cream mixture into yolks, whisking constantly to temper – but not scramble – the eggs. Pour the tempered egg mixture into the saucepan, whisking constantly. Place the saucepan over medium heat and stir constantly until the mixture thickens enough to coat the back of a spoon.

• Place chocolate in a medium-sized, heatproof bowl. Pour the hot custard mixture through a fine mesh strainer into the chocolate, and whisk until the chocolate melts.

• Stir the beer into the mixture, cover and chill in the freezer overnight.

• Add to ice cream maker and follow manufacturer’s instructions.
