Basil Sorbet

Ingredients

9 oz. orange juice
5 oz. ice cubes
4 oz. basil leaves
9 oz. sugar
5 oz. lemon juice


Preparation

• In a blender or food processor, blend together the orange juice, ice cubes and basil, making sure not to blend too long or the basil may lose its color.

• Combine the sugar and lemon juice in a saucepan and heat until the sugar has dissolved.

• With the blender running, slowly add the sugar-lemon syrup, making sure not to make the mixture too warm.

• Strain the basil mixture and quickly cool it in an ice bath before spinning in an ice cream machine.
