Not-Too- Sweet Crust

Ingredients

6 oz. English “digestives” cookies (like McVitie’s Biscuits)
5 Tbsp. unsalted butter, melted


Preparation

• Preheat the oven to 350 degrees.

• Place the cookies in a plastic bag and, using a rolling pin or can, smash them into crumbs. Take 1½ cups of the cookie crumbs and mix with the melted butter. Press the mixture into a 9-inch round springform pan, and bake for 8 minutes, or until the crust is just a shade darker than brown.
