Jalapeño Salsa



Ingredients

1 cup chopped, peeled and cored tomatoes
1 cup chopped jalapeño* peppers, seeds removed if desired
1/3 cup chopped onion
3 cloves minced garlic
1 Tbsp. minced cilantro
1/2 tsp. coarse salt
1 tsp. ground cumin (or to taste)
1/3 cup cider vinegar (5 percent acidity)


Preparation

• Combine all the ingredients in a large saucepan.

• Bring the mixture to a boil, reduce the heat and simmer 10 minutes.

• Let it cool to room temperature before serving, or refrigerate it if you prefer to serve it chilled.

* For spicier taste, replace the jalapeños with serranos. For a less spicy taste, replace them with milder peppers.
