This salad at newly opened Cucina Pazzo is unique and delicious. Buttermilk ranch dressing is blitzed with salty, rich Kalamata olives and pooled along side a tangle of escarole, fennel, red onion, cucumbers and tomatoes dressed in a bright lemony vinaigrette. Mix in as much of the dressing as you’d like or dip your fork to get the taste on each bite. And don’t be put off if you’re not an olive person: all you taste is salty, creamy goodness.
