Robert Palleja, owner of Di Olivas, the emporium in West County Mall that’s developed a reputation for carrying premier olive oils, balsamic vinegars, sea salts and other gourmet goodies, is adding a second location. The newest Di Olivas destination will be located at 617 S. Main St., in historic downtown St. Charles and is slated to open March 1.
Why St. Charles? “Stores like this really belong in historic districts, but [it] takes a bit longer to build them up,” responded Palleja. “Once we had established ourselves in the mall and proved there was a market, then we knew that we could open in St. Charles where we already had some brand recognition.”
Although the selection at both stores will be primarily the same, the St. Charles spot will have a few items not available in the West County Mall space including a few vinegars as well as the DeCio brand of handmade flavored pastas. Palleja also noted that he will be changing up some seasonings so as not to compete with a neighboring spice shop.
