Claire Robberson is leaving her post as executive pastry chef at Eclipse. Robberson, who has worked at the hotel restaurant in The Loop since it opened in 2009, is moving in a matter of weeks to Austin, Texas. While Robberson does not have a position lined up in Austin, she hopes to secure a post as a pastry chef. “St. Louis has always been home for me, but I am excited to discover a new city. I hear nothing but great things about Austin, and I look very forward to starting a new life there,” Robberson said of her decision to move south.
Replacing Robberson at Eclipse is Beth Hughes, a graduate of the culinary program at St. Louis Community College-Forest Park, where she concentrated in baking and pastry arts. Hughes has been the assistant pastry chef at Eclipse for the last 18 months. Prior to Eclipse, she worked at Pi with pastry chef Mathew Rice. “I have no doubt she will be amazing, and I’m excited for her to grow her abilities,” said Robberson of Hughes’ promotion.
