An expanse of salads, sandwiches, burgers, pizzas, pastas and sea-centric entrees make the new menu at Roxane a fun one to explore. But for a meatless Monday, I’m sticking to the restaurant’s sun-dried tomato risotto. For this creamy rice dish, hunky artichoke hearts, briny capers and caramelized red onions team up with sweet dried tomatoes – all of it napped with a sweet balsamic reduction – to pack a heck of a flavor punch. The portion size on this salmagundi means if you order it for lunch, you’ll likely have enough for dinner. A double meatless Monday – the veg gods would be so proud.
