Truffle Salumi

To the few dozen of you who enjoy a great piece of cured meat as much as I do, here is one of my favorite parts of the holidays: the truffle salumi at The Wine Merchant in Clayton. These silky little links are absolutely studded with tasty black truffles, though their irresistible perfume (to me) sends my wife (a truffle hater) running from the room every time I crack the lid to snag a few quarter-sized medallions. I recommend having The Wine Merchant slice them for you for simpler snacking. They only come out this time of year – and while you can horde them to enjoy them all year long, I like to slice ’em up tiny and toss them into scrambled eggs.
