Freshly brewed beer will soon flow from the taps at Crafty Chameleon, a new bar opening at 1384 Clarkson Clayton Center in Ellisville. That’s good news for craft beer aficionados, who will have their pick of microbrews among the 40 draft selections – half of which will be dedicated to Missouri breweries – as well as another 300 in bottles or cans, according to co-owner Jay Quezada.
The bar’s name references not only its focus on craft beers, but also a constant change of offerings. “We are going to rotate our taps quite a bit,” said Quezada, who developed a love of beer and home brewing during a military tour in Germany.
Although Crafty Chameleon will not offer food, patrons can bring their own. Quezada also reached out to eateries in the shopping center, including Windowsills Cafe and Marketplace, which will deliver food “right to your table,” said Quezada.
The newly renovated space, formerly a Chevy’s restaurant, will have seating for 100, plus a 40-seat patio. Quezada hopes to open doors July 13 or July 20, pending health inspections. Hours of operation will be weekdays from 3 p.m. to 1 a.m. and weekends from 11 a.m. to 1 p.m.
