Here at Sauce, we’re kicking off the new year by resolving to eat more food than ever, starting with Grace Meat + Three’s Sandwich Resolution. Beginning Jan. 7, the restaurant known for its scratch-made Southern comfort food will be unveiling a new, limited-time chicken sandwich designed by a St. Louis favorite each week throughout the first month of 2026.
“I reached out to my friends and asked if they would help us launch a sandwich series by bringing to life what their dream fried chicken sandwich would be,” said Rick Lewis, co-owner and chef of Grace Meat + Three. Those friends include former Cardinal’s pitcher and country singer Adam Wainwright, Chris Bolyard of Bolyard’s Meat and Provisions, Jason Bockman of Strange Donuts, and Will Guidara, restaurateur and author of Unreasonable Hospitality. “January is when everyone talks about starting fresh,” Lewis said. “We wanted to bring some fun to that idea, something people can look forward to each week. Working with this dream team of creators makes it even more special.”
Every Wednesday in January, a new sandwich will drop at both Grace Meat + Three in the Grove and Grace Chicken + Fish in Crestwood.
Jan. 7-11
Adam Wainwright’s Georgia Boy harnesses Grace’s signature Southern comfort. The sandwich is based around that famous fried chicken and a smothering of pimento cheese, plus what Wainwright describes as “peach-bacon goodness drizzled over the top,” all on a buttermilk biscuit.
Jan. 14-18
“I personally enjoy a little bit of heat or spice in my fried chicken, not too much, but just enough,” said Chris Bolyard. His sandwich, The Feisty Chic, delivers a kick to Grace’s famous fried chicken with a hot honey glaze, pepper jack cheese, smoked tomato jam and curried pickles, all on a toasted potato roll.
Jan. 21-25
Also on a potato roll is Jason Bockman’s Stranger Danger, featuring garlic buffalo sauce, spicy jicama slaw and blue cheese crumbles. “I think jicama is one of my favorite ingredients – totally under-utilized,” Bockman said. He designed his sandwich using his love of every kind of flavor, from sweet to salty to spicy.
Jan. 28-Feb. 1
Rounding out the list is Will Guidara’s Momma Guidara’s Carbonara. Guidara is proud of his carbonara-making skills, and now it’s a chicken sandwich featuring roasted garlic spread, carbonara sauce, arugula, crispy pancetta, and shaved Parmesan on a seeded hoagie. “It’s the thing that I love to cook; it’s my go-to, and so for this collab, that felt like the obvious choice,” he said.
