Chappell Roan is having a moment, so naturally we are jazzed about Midtown’s Hidden Gem transforming into a dreamy, neon-drenched honky tonk for its Pink Pony Club pop-up. Inspired by retro disco, rhinestone rodeos, and old-school Las Vegas glamour, the pop-up opens on Tuesday, Feb. 11, and runs through March 29 at 3118 Locust St.
Following the success of their holiday pop-up, Santa’s Speakeasy, Hidden Gem co-owners Amanda Helman and Susan Logsdon were eager to create another immersive experience. “Santa’s Speakeasy was sold out pretty much every night, and it got us thinking about what other fun concepts we could pop up in this space,” said the duo in a release. “St. Louis clearly loves a theme, and we really only see themed pop-up bars during holidays – so why not do them all year round?”
Pink Pony Club takes inspiration from Chappell Roan’s viral hit, channeling a whimsical Western-meets-disco aesthetic. Guests can expect neon lights, luxe textures and even a disco-tiled carousel horse spinning under magenta lights and shimmering disco balls. “We wanted to take that vibe and turn it into a space where people could gather,” said Logsdon.
The menu will feature six to eight signature cocktails and mocktails, designed by Bar Manager Giselle Brooks, served in Instagram-worthy specialty glassware with playful, extravagant garnishes. Highlights include Silk Chiffon, a creamy blueberry-sage martini with vanilla and vodka, alongside other drinks adorned with edible glitter, cotton candy, and nostalgic casino-inspired garnishes. Guests can also snack on cake pops, mini tacos, pizza rolls and Hidden Gem’s signature hot dogs.
The pop-up will take place in Hidden Gem’s intimate back room, seating around 50 guests at a time. Reservations are available online and highly encouraged, but walk-ins will be welcomed. Pink Pony Club will be open Tuesday through Saturday starting at 5 p.m. Entry is $5 for guests 21 and older.
