Pie Guy Pizza, the New York–style slice shop in the Grove, is hitting pause on its regular service hours and format for the next several months while it makes internal updates.

Owner Mitch Frost said the improvements are designed to enhance both the guest experience and the quality of life for the staff. “With the recent addition of our bar, we realized part of the classic New York–style slice experience had been lost – you’ve just got to be able to see the pies when you’re choosing your slice,” Frost said. “To bring that back, we’ve added a new service window and refreshed our layout with a warmer, more welcoming table setup. This not only makes the space more inviting, but also makes ordering and receiving slices more fun and efficient.”

Behind the scenes, Pie Guy is upgrading equipment to make day-to-day work easier. “One big step is upgrading from a three-compartment sink to an automated dishwasher; our backs are already grateful,” Frost said.

During the transition, the restaurant has reduced its hours (previously open for lunch more days a week) to Tuesday through Saturday from 4 p.m. to 1 a.m. and Sunday from 10 a.m. to 8 p.m. Instead of its usual whole pies, Pie Guy will offer its popular curbside take-home pizza kits and nightly specials, including a happy hour from 4-6 p.m. with $5 cheese and pepperoni granny slices and discounts on all 4Hands Brewing products. Vegan and specialty slices will be available from a new menu, alongside rotating pop-ups from local restaurants like Damn Fine Hand Pies and Songbird.

Frost emphasized that while operations may look different for a while, the heart of Pie Guy hasn’t changed. “Through all of these changes, two things remain at the core of Pie Guy: Our community-driven mission of providing a safe, welcoming space, and our commitment to serving top-notch pizza to share with each other.”

To keep things lively, the shop is also programming DJs, live music, meat bingo, cornhole tournaments and video game competitions. The full bar will remain open throughout the transition.

“We are so grateful for your continued support and we are extremely excited to come back well rested and with a new flame burning strong,” Frost said.
