Steve’s Meltdown, known for its gourmet grilled cheese, is set to open its second location at The District of St. Louis in Chesterfield on Friday, Feb. 7.

The concept, which first gained traction as a ghost kitchen at Steve’s Hot Dogs on South Grand before establishing itself as a standalone restaurant at City Foundry STL, is the brainchild of HuSTL Hospitality. The group, led by Steve Ewing and Danni and Marcus Eickenhorst, also operates local favorites Steve’s Hot Dogs, The Fountain on Locust and The Fountain on Delmar.

The new Steve’s Meltdown will operate within the recently opened Steve’s Hot Dogs location at The District, serving up its signature grilled cheese sandwiches and scratch-made soups through a rear service window. Customers within the delivery area will also be able to order directly through the Steve’s Meltdown website.

Ewing and the Eickenhorsts, alongside their HuSTL team – including Chief Growth Officer Jeremy Robinson and Culinary Director Joseph Zeable – have crafted a menu that elevates comfort food with unique flavors and high-quality ingredients.

“We’re beyond excited to bring Steve’s Meltdown to Chesterfield and add another delicious dining option to The District,” Ewing and Eickenhorst said in a joint statement. “What started as a passion project in a ghost kitchen has grown into something truly special. We can’t wait to share our love for gourmet grilled cheese with even more people around St. Louis.”
