020911_eggIf you’re a regular denizen of the Maplewood Farmer’s Market, you’ve undoubtedly picked up eggs at one time or another from Farrar Out Farm. The organic eggs from free range hens, filled with bright orange yolks, make those grocery store eggs, well, pale in comparison.

Now you don’t have to wait until market season starts up again to enjoy these farm-fresh eggs. Just walk a few doors west of Schlafly Bottleworks and pop into Foundation Grounds where you can pick up a dozen eggs from the organic farm located in Frohna, Mo.

Sure, you can use them for an every day omelet or frittata, but why stop there? Combine the yolks with some butter and lemon juice to make lemon curd, a bit of sunshine perfect for these gray days. Or lightly boil some purple potatoes, hard boil the eggs and toss them with a light vinaigrette and some crisp tender green beans for a colorful potato salad.
