Yesterday, Josh Galliano, former executive chef at the now-defunct Monarch restaurant, announced via Twitter that he’ll soon be launching a fried chicken pop-up restaurant.

But fans of the chef’s southern fare and folks simply hungry for fried chicken won’t have much time to savor Galliano’s cooking before he’s in and out of the kitchen; his pop-up will be open exactly one day – August 13 – with tentative hours of 5 to 9 p.m.

Galliano told The Scoop that the idea for a “fried chicken shack” spawned from National Fried Chicken Day, celebrated annually on July 6. His menu, to be finalized this week, will include 2-, 3- and 4-piece chicken dinners, plus six to seven side dishes and a selection of four or five flavors of pie for dessert. “It will be a simple menu that can be accomplished by a few guys,” said Galliano. “If we do 80 to 100 covers, that would be awesome.”

We now know the when but what about the where? Galliano, preferring to have promotional flyers designed before the exact location is disclosed, provided the following details: The affair will be held at a 60-seat restaurant (where Galliano has never cooked before) situated in St. Louis county that is closed on Monday evenings. No reservations will be taken, but carryout will be available. Stay tuned for details.
