The wheels are turning for Seoul Taco owners David Choi and Andy Heck. Their Korean fusion street food (That’s Seoul’s spicy pork in everything from gogi bowls to quesadillas to the right.) has become so popular that the business partners are looking to open a brick-and-mortar restaurant. “We’re running out of commissary space,” said Choi. “The demand for our food is strong.”

Choi told The Scoop that since he and Heck are looking for a space with an existing kitchen, they have been checking out the digs at now-shuttered restaurants. Among the prospective areas that may become the permanent home to Seoul Taco are: the Central West End, The Loop, downtown Clayton and downtown Kirkwood. Choi also noted that, once Seoul Taco opens a brick-and-mortar joint, the next goal will be to add a second truck to the fleet, with one truck servicing St. Louis city and the other strolling around the county.

In other food truck news, yet another mobile eatery is up and running. Burger INK. is serving up a selection of gourmet burgers as well as paninis and wraps. Burger INK., as reported by Ian Froeb of the Riverfront Times, is a project by chef-owner Josh Lemmon. For the moment, look for the burger truck to blaze a trail in St. Louis county. Finally, Sarah’s Cake Stop has been invited as a guest truck to participate in a food truck affair in Kansas City, Mo. On Friday, July 6, the St. Louis cupcake truck will hang with mobile cuisine brethren of K.C. at The Truck Stop, a monthly food truck event held in that city’s Crossroads section of town.
