INGREDIENTS
2 cups cooked chickpeas
2 ripe avocados
2 Tbsp. tahini
1 Tbsp. minced garlic
½ tsp. table salt
¼ cup plus 1 Tbsp. olive oil, divided
2 Tbsp. lime juice.
1 Tbsp. chopped cilantro, for garnish
PREPARATION
In a food processor, combine the chickpeas, the flesh of the avocados, tahini, minced garlic and table salt and pulse until well combined.
With the food processor running, pour in the olive oil and lime juice. Add water 1 tablespoon at a time until the hummus reaches your desired texture. Taste and adjust seasonings.
Drizzle with 1 tablespoon olive oil and garnish with chopped cilantro.
