INGREDIENTS
2 to 3 cups chopped turkey
3 cups cooked cannellini or Great Northern beans
1 cup chopped onion
1 cup frozen corn
1 4.5-oz. can chopped green chiles, drained
2 cloves garlic, minced
1 Tbsp. adobo sauce
2 tsp. ground cumin
2 tsp. chili powder
1 tsp. dried oregano
4 cups chicken broth
6 oz. sour cream
shredded cheddar cheese, chopped avocado, chopped cilantro and lime wedges, for serving
PREPARATION
In a slow cooker, combine the chopped turkey, cannellini or Great Northern beans, onion, corn, green chiles, garlic, adobo sauce, cumin, chili powder and dried oregano.
Add the chicken broth and stir. Cook on low for 5 to 6 hours.
Stir in the sour cream, adjust seasonings and serve with shredded cheddar cheese, chopped avocado, chopped cilantro and lime wedges.
