The husband-and-wife team behind Mr Papas 2 Go is bringing slow-roasted meats, island-inspired sandwiches and fried yuca to Wash Ave Food Hall.

A new taste of the Caribbean is headed to downtown St. Louis. 787 Subs, a Puerto Rican-inspired sandwich concept from husband-and-wife duo Jose and Cynthia Ramos, is joining the lineup at Wash Ave Food Hall, opening this fall at 1122 Washington Ave.

The couple is no stranger to the St. Louis food scene. After launching their popular Mr Papas 2 Go food truck five years ago, the Ramoses are putting down roots with a permanent concept inspired by their Puerto Rican heritage. The name 787 pays tribute to one of Puerto Rico’s signature area codes.

The star of the menu is La Tripleta Boricua, a Puerto Rican classic stacked with slow-roasted pork, grilled steak, ham, melted Swiss cheese, crispy potato sticks and signature mayo-ketchup sauce. Other highlights include island-style pastrami, garlic-marinated steak sandwiches, Caribbean-seasoned slow-roasted pork and a vegetarian option. Every sandwich comes with fried yuca and house-made mayo-ketchup sauce.

“For me, the difference is in how the food is prepared,” Jose Ramos said in a press release. “We marinate, we slow cook and we give the flavors time to develop.”

787 Subs joins a growing roster of local concepts at Wash Ave Food Hall, including Arzola’s Tacos y Más, Troit, Conefection, Little BAO, Macis’ Prime BBQ, Steve’s Smash – Burgers & Fries and 4 Hands Brewing Co. The food hall will also feature multiple bars, self-pour beverages, shared seating and an indoor-outdoor gathering space with a retractable roof.

Wash Ave Food Hall is scheduled to soft open in late October, with a grand opening celebration November 5–8 and an official ribbon cutting November 6.
