Good Hospitality executive chef Adrian Maldonado recently joined The Sauce podcast to talk about the two new Mexican concepts in the Grove, Chico Bueno and Malo. Maldonado shared how he draws inspiration from his mom and grandmother’s cooking, transforms comforting dishes into fine dining and keeps the kitchen fun even during a busy service. He also talked about his favorite St. Louis spots, the story behind Aperi’s sunflower caramel Brussels sprouts – the Eat This recommendation in the October issue – and what’s next for Good Hospitality. Here, he shares five of his favorite local restaurants.

Menya Rui
“There is nothing more comforting than a bowl of noodles from Menya. The line sometimes wraps around the corner, but I personally enjoy the wait. It builds anticipation for a perfect meal. My go-to is the aburasoba.”

Damn Fine Hand Pies
“A cook brought me their Boston cream pie donut a week or two after they opened, and I’ve been hooked ever since. Also, don’t miss out on the chicken salad croissant!”

Himalayan Yeti
“You can’t beat a Nepalese buffet. Fresh naan, aloo mataar and butter chicken. I’m there almost every Tuesday.”

Oni
“The food is great, but the staff is even better. It’s great being neighbors. We can slide down after a service at Malo and have an amazing time. A warm green tea and crab rangoons.”

Hatch’d
“Another spot where the food is great, but their team is also exceptional. The best breakfast in STL.”
