In December 2024, the electrifying energy of Atomic by Jamo at 4140 Manchester Ave. in the Grove became the stage for a culinary debut that has captivated St. Louis food enthusiasts. Weekend at Baudy’s, the pop-up by celebrated chef Baudy Alvarez, launched to resounding success, quickly earning an extension through Feb. 2 due to its immense popularity. Known for his bold flavors and inventive approach to street food, Alvarez brings a menu that harmonizes tradition with creativity, offering dishes as dynamic as the venue itself.

The collaboration between Alvarez and Atomic began serendipitously. As Alvarez recalled, “Drew and his team got a chance to try the food, and he was convinced on the first bite.” Drew Jameson, managing partner of Atomic, echoes the enthusiasm: “His fast-casual concept is the perfect complement to our wide-ranging beverage program.” This partnership not only highlights Alvarez’s culinary talent but also Atomic’s dedication to creating unique, immersive experiences for its patrons.

The menu at Weekend at Baudy’s showcases Alvarez’s signature style, offering birria tacos, street corn on the cob, birria-style ramen and quesadillas. Diners can customize their meals with a variety of proteins, including beef, chicken, shrimp and chorizo. A vegetarian option featuring double cheese, double vegetables and signature sauces, rounds out the offerings. “I like bold,” Alvarez explained. “You can taste that it’s taken labor and time for the flavor to come through.”

Alvarez’s journey to Weekend at Baudy’s is as compelling as his food. A self-described “aficionado of flavors,” Alvarez’s career began in semi-formal kitchens and evolved through years of experimentation. “I just like to taste, make what’s good and bend the rules,” he said. This philosophy is evident in his ability to infuse familiar street food with innovative twists, paying homage to his Hispanic heritage while crafting something uniquely his own.

The name Weekend at Baudy’s carries a rich personal significance, rooted in after-hours gatherings and the camaraderie of sharing food with friends during the pandemic. Alvarez would host impromptu late-night cooking sessions for friends, drawing them from their slumber with the aroma of his food. “My friends always referred to our place as ‘Weekend at Baudy’s,’ like the movie ‘Weekend at Bernie’s,’” Alvarez shared.

Atomic’s lively, multi-room venue amplifies the appeal of Alvarez’s food. With live music and a diverse crowd, it’s the perfect setting for Weekend at Baudy’s. “A lot of new faces means new regulars,” Alvarez explained. “It’s been a learning experience to put myself out there and connect with people in a more personal way.”

Beyond the pop-up, Alvarez envisions a bright future. With dreams of owning his own restaurant or even a franchise, he remains grounded in his passion for bold, labor-intensive flavors. “The sky’s the limit,” he beamed. For now, Weekend at Baudy’s serves as a testament to what can happen when passion and opportunity intersect. As Alvarez puts it, “Drive past Taco Bell and buy more tacos.”

Weekend at Baudy’s operates Thursdays through Sundays from 4 p.m. to 1:30 a.m. at Atomic until Feb. 2, offering St. Louis diners an unforgettable fusion of food, flavor and ambiance.
