The best pizza on the menu at Pizza Champ is the one with the least amount of cheese on it: the marinara. Yes, we were also surprised, but its bold flavors are undeniable: sliced garlic, tomato sauce, spice from red pepper flakes, bite from red onion and pops of fresh herbs make it an understated hit. A light dusting of shaved Parmesan and pecorino is just enough cheese to bring the symphony of flavors underneath into balance.
