Chris Bolyard announced in February that he would be leaving his post as chef de cuisine at Sidney Street Cafe to open a butcher shop with his wife, Abbie. Some 10 months later, they’re ready to unlock their doors at 2810 Sutton Blvd in Maplewood.
Chris and Abbie Bolyard are the husband-and-wife owners of Bolyard’s Meat & Provisions.
The smoker at Bolyard’s Meat & Provisions will be used to smoke everything from turkey to bacon.
Bolyard’s sells soap, hand and lip balm made from its beef tallow. The body care products are made by neighbor Maplewood business Maven.
The meat counter at Bolyard’s is filled with primal cuts, fresh sausages, cured meats and other prepared meat products. Bolyard’s sources its meat from small family farms in Missouri and Illinois.

Need a quick snack? Grab a bag of fresh, house-made chicharrónes (pork rinds) and a to-go cup of steaming hot beef, chicken or pork broth.

Bolyard’s refrigerator is filled with house-prepared kitchen staples like lard and stocks and condiments such as Worcestershire, ketchup and harissa.
