The sausage on the East Meats West is filled with wasabi powder, soy sauce, onion and garlic, then topped with bulgogi sauce, house-made kimchi and fried rice noodles.
Clockwise from left, sides include braised collard greens (the first rotating “wild card” option), cole slaw and baked beans.
From left, five regular sausages will be available at The Cut, including The OG, the BLT dog, the East Meats West, the Tofu (Sausage) and The Cherokee-rizo.
Customers can order at the window inside Fortune Teller Bar, where chef-owner Ari Jo Ellis will turn out house-made sausages from hogs she butchered on-site.
From left, The OG is a classic German bratwurst with beer mustard and sauerkraut. The Tofu (Sausage) is a Mofu-based link topped with peppers and a sunflower-arugula pesto, and the Cherokee-rizo covers chorizo with piquillo pepper mayo and arugula.
Chef-owner Ari Jo Ellis opens The Cut inside Fortune Teller Bar at 2635 Cherokee St., tonight, Sept. 1.
