Just when you thought the goat cheeses from Baetje Farms couldn’t get any better, the Bloomsdale, Mo., farm has added an aged raw-milk feta to its early spring lineup. The feta is sold in a golden marinade of extra-virgin olive oil flavored with sun-dried tomatoes, roasted garlic, minced basil and peppercorns. Beautiful to behold but better to taste. Melt it creamy in omelets or crumble some on salad, Greek or otherwise. Add zing to a fine crostini, or pop some in your mouth for a snack. An added bonus – the olive oil marinade can be whisked into a tangy vinaigrette.
The cheese will only available for a few weeks, probably until the end of March, so don’t wait. Stop by the Baetje Farms stands every Friday and Saturday at Soulard Farmers’ Market and this Saturday, March 14, at the St. Louis Community Farmers’ Market at St. John’s Episcopal Church across from Tower Grove Park.
