050411_delcarmenAt the local farmers’ market, you probably expect to see plenty of produce and artisan food products from the bi-state region. You might not expect to see prepared dishes of Cuban-style black beans and rice. You might not expect it, but that’s exactly what you’ll find on any given Wednesday at the Maplewood Farmer’s Market when you stop by the del Carmen Foods booth.

Owner Estie Cruz-Curoe hails from Cuba and prepares the beans in an authentic style, meaning she doesn’t skimp on the spice. Expect more than mere heat; these beans have a complex and full flavor profile. Cruz-Curoe offers several products ranging from dips to a fully packaged rice-and-beans combo that’s perfect for a quick lunch. We like to heat the rice and beans together with just a touch of chicken broth, add some Queso Chihuahua and roll the whole shebang into a tortilla. If you want to veer off the vegetarian path, just stir some cooked chicken or shrimp into the mix as well.

We are most enamored, however, with Cruz-Curoe’s black bean soup, with its slightly citrusy bite. You could take the easy road and simply reheat it, but we like to reduce it down slightly and drizzle it over roasted chicken or grilled salmon. Add a shot of sherry to the sauce, then mix up some daiquiris and you’ll be transported back to old Havana in now time.
