Renovations have begun at 3674 Forest Park Ave., in Midtown to make way for new fast-casual restaurant Flying Rolls. Located near Saint Louis University, Flying Rolls is slated to open June 1, according to co-owner David Culver.

Culver said he and co-owners Clayton Park and Andrew Impagliazzo plan for Flying Rolls to be a healthy, fast-casual sushi option with much of its business focused on carryout and delivery. The menu is still in development, but Culver said it will include a wide range of options to please sushi lovers and sushi-phobes alike.

“We’re trying very hard to emphasize that we make rolls, not sushi specifically,” Culver said. “We will have unique options so if you are not a fish lover, we will have a chicken teriyaki roll.” Patrons will also have the option to create custom rolls with everything from asparagus to mango to beef teriyaki.

This is the first restaurant venture for Culver and Park, but Impagliazzo’s nearly 20 years of industry experience spans fine dining to pizza delivery.

Culver said renovations have just begun at the 1,500-square-foot space, which he hopes will seat about 30 to 40 patrons. He is currently in the process of hiring sushi chefs and a wait staff, as well as obtaining a liquor license to serve beer, wine and sake.
