As we speak, the team at Dottie’s Ice Cream Parlor is taste-tasting products for its eco-friendly shop, set to open in the next two weeks at 11656 Manchester Road in Des Peres. Along with soft-serve and hard-pack ice cream, Dottie’s other focus is green: biodegradable, corn-based containers and straws; booths and counters made from recycled concrete; uniforms made from hemp; and a sign out front that’s powered by a solar panel on the roof. All that, plus concretes, cones, sundaes and shakes.
