For rimming, combine 2 tablespoons of the Demerara sugar in a shallow bowl with a pinch each of cinnamon and nutmeg. Adjust seasoning if necessary.
Dip half the rim of a Collins glass into the sugar mixture and set aside.
Pour the tequila, ginger liqueur, Cointreau, blueberry syrup and lemon juice into a shaker filled with ice. Shake and strain into the Collins glass filled with fresh ice.
