• In the bowl of a food processor, combine the arugula, walnuts, tomatoes, cheese and garlic. Pulse gently.

• Add the olive oil and pulse again to desired consistency.

• Season to taste with salt and pepper.

1½ cups tightly packed fresh arugula
¼ cup black walnuts
¼ cup sun-dried tomatoes, marinated in olive oil (drained)
¼ cup Parmesan cheese
1 garlic clove
1/3 cup olive oil
Kosher salt and freshly ground black pepper to taste
