Combine the water and Demerara sugar in a medium-sized pot. Stir well.
Over medium heat, dissolve the sugar, then the add lemon juice and blueberries. Bring to a boil, then simmer for 10 minutes, or until the fruit has broken down.
Double strain into a clean jar, gently pushing the back of a spoon against the blueberries to release any additional juices.
