Using a mortar and pestle or a spice grinder, grind the toasted sesame seeds to a powder.
In a small bowl, stir together the ground sesame, vinegar, soy sauce, sesame oil and sambal oelek. Add the green onions. Set vinaigrette aside.
Peel the daikon radish and cut into 2-inch sections. Slice each section lengthwise into Œ-inch strips, and then cut each strip into matchsticks (You should have about 2 cups of daikon pieces.) Set aside.
Quarter the apple, cut the core away from each quarter, then cut the quarters into thin matchsticks about the same size as the daikon pieces.
Put the daikon and apple in a large bowl. Add the edamame. Pour the vinaigrette over the slaw. Toss and serve.
3 Tbsp. rice vinegar
2 Tbsp. soy sauce
2 Tbsp. sesame oil
2 tsp. sambal oelek 4 green onions (white and green parts), thinly sliced
1 large daikon radish
1 medium Red Delicious apple
1 cup edamame
