Tallgrass Buffalo Sweat is a stout is brewed at Tallgrass Brewery in Manhattan, Kan. A salty, spicy Cajun rub pairs perfectly with this malty stout, taking beer-can chicken back to its Southern roots.

INGREDIENTS

1 Tbsp. paprika
1 Tbsp. cayenne
1½ Tbsp. dried thyme
2 tsp. dried rosemary
¼ tsp. garlic powder
Salt 
Extra virgin olive oil

PREPARATION

Combine the first five ingredients.

Sprinkle salt inside the bird’s neck and main cavity and on top of its skin. 

Cover the entire bird with olive oil, and then season the outside of the bird with the dry rub.

Proceed with the basic recipe.
